Fruit Dip

For this Tasty Tuesday, I'm posting a recipe my friend taught me. She called it 'better than sex cream', but I just call it really awesome Fruit Dip ;)
This is so simple you're not going to belive it!It's so good I've actually been known to just scoop it up with a finger and eat it!


What you'll need:

1 package cream cheese, softened (brand doesn't matter)

1 jar of Marshmellow Fluff

Strawberries (or any kind of fruit you want)



How to make it:
Just whip the cream cheese and Marshmellow Fluff together until smooth.
I use the mixer but I have done it by hand with a fork too!
It's best after you refridgerate it for awhile but I never make it!
It's so good I usually just dig right in. Which is fine too!

Strawberries are the best to eat it with but it's awesome with
grapes, apples, peaches, whatever kind of fruit you like
My mom sometimes uses strawberry flavored
cream cheese. It doesn't change the taste all
that much but it does make a pretty pink color!

-actually think this is better than sex (it does come awful close!),

Chicken Quesadillas

For this Tasty Tuesday, I'm giving you all a recipe for Chicken Quesadillas. My hubby thinks they're better than Taco Bells ;)

This recipe looks complicated but I promise it's not. It's mostly just layering stuff on top of other stuff. The hardest part is chopping the jalapenos for the sauce! Really, just try it. You'll like it.

Ingredients:

4 chicken tenderloins
4 (10 oz) lg. flour tortillas
1 cup shredded Cheddar cheese
1 cup shredded Monterey Jack cheese
2 slices American cheese
1/4 cup Mayo
2 tsp. minced canned jalapeno slices (the smaller, the better)
2 tsp. canned jalapeno juice
3/4 tsp. Sugar
1/2 tsp. Paprika
1/2 tsp. Cumin
1/2 tsp. Cayenne pepper (I use the powdered kind in the spice section)
1/8 tsp. Garlic powder




Jalapeno Sauce
Combine Mayo, Jalapenos, Juice, Sugar, & the seasonings- Paprika, Cumin, Cayenne pepper & the Garlic powder. Mix until creamy. cover and chill so that the flavors develop. Stir every now and then.

Cooking the Chicken
The recipe says to rub the chicken tenderloins w/ vegetable oil, salt, & pepper on each side and cook until done, then slice it real thin. But I just boil it then shred it. It's a lot easier and quicker to do! Either way tastes fine, I've tried both.


Building the Quesadilla
When you're ready to build the quesadillas, preheat a skillet over medium-low heat. When the pan is hot, lay a tortilla in the pan. Arrange 1/4 cup top of the cheddar and 1/4 cup of the monterey jack cheese on half of the tortilla. Tear up a half slice of american cheese and put it on top of the other cheese.

Arrange about 1/4 cup (I just do a handful!) of sliced (or shredded) chicken over the cheese.

Spread 1tablespoon of the jalapeno sauce over the half of the tortilla with nothing on it.


Fold it and press it down. Cook it for about 1 minute, then turn it over and cook another minute or two or until the cheese is melted.

Slice it into 4 pieces (a pizza cutter works great!) and serve while it's hot. I serve it with sour cream on top.

Extras
Steak also works great.

There's really no set way to layer the quesadilla. I usually put the sauce on first then chicken, then cheese. However you throw it on there, it still tastes the same! I don't know why the recipe goes into so much detail about it ;)


I've also used pepper jack cheese on it. It makes it spicier but good

BTW the sauce isn't real spicy. I know by the ingredients it sounds really hot but it really depends on how much sauce you put on it. If you're sensitive to spicy foods, just put a little less sauce. I like more heat so I actually put extra sauce on it. I have to double the recipe for it!

Cheesy Taco Casserole

For this Tasty Tuesday I'm putting up a very simple taco casserole. My husband says it's scrum-diddly-umpcious! I'm assuming that means its good? Anyway here's the recipe hope you enjoy it!

What you'll need:

1lb gorund beef (turkey will be fine)

1 box Kraft deluxe mac & cheese

1 (16 oz) container sour cream (lowfat for fewer calories)

Salsa (your favorite brand)

1 pkg. taco seasoning mix

2 cups shredded chedder cheese (again lowfat is ok)



How to make it:


Brown ground beef , drain. Add the taco seasoning with about 1/4 cup of water. Cook until most of the water is gone. Cook the macaroni and cheese according to the directions on the box. Stir in half of the shredded cheese until melted. In a casserole dish, pour the macaroni in the bottom, spread the sour cream on top of the mac & cheese. Put the taco meat on top of the sour cream. Pour the salsa on top to the taco mixture. Sprinkle the rest of the cheese on top. Place it in the oven and bake at 350 degrees for 20 monutes or until heated thoroughly.

Extas:

I top mine with tomatoes, more sour cream, and taco sace by the bowl, not on the entire thing. I sometimes put onions, green pepper, lettuce, olives, really whatever you feel like thowing on it at the time! Also if you're feeling lazy, I sometimes just mix in the sour cream with the mac & cheese. It works just as good!


Play around with it, have fun! Cooking doesn't have to be a chore!

Easy Italian Pasta Salad

I'm starting my new Tasty Tuesday post with a super easy one:

Here is one of my guys' favorite summer recipes. All 3 of them love it! It actually comes from my husbands Grandmother. It's a very simple Italian pasta salad. Even people that can't cook a bit can make this dish! (I had a really yummy picture I took to put on this post but I must have accidentally erased it...sorry!)

What you'll need:
1 box of rotini
zesty Italian dressing
1-2 tomatoes cut up into chunks
sugar

Directions:
Cook the rotini until done. Run it under cold water until chilled, drain. Put the rotini in a bowl. Put a little of the Italian dressing (just the cheap store brand is what I use. I think it works better!) in the noodles so they don't stick. Throw in the tomatoes and put about a 1/4 cup of sugar in. Really just sugar to taste. Pour in more of the italian dressing. It takes more than just covering the noodles because the noodles soak it all up. So put quite a bit in even when it looks like too much. In a couple hours it'll be good. Mine always looks like it's swimming in dressing! Just keep tasting while you're adding the sugar though. My husband likes it a little sweet, if you want it more tangy use less sugar. Chill for at least 30 min. I put a really good lid on mine and shake it up right before I eat it so it gets mixed up really good. That's it! Simple as that. I take it to any dinner I go to that I have to bring a dish. It's so easy, cheap and you can make it the day before. Actually it tastes better when it has been in the fridge a couple days!

A couple ideas:
Try adding in different ingredients! My husband loves it when I add in a jar of sliced mushrooms. You can use fresh if you want. I like to add fresh banana peppers from my moms garden in it. My husbands grandma sometimes puts shredded cheese in. Go ahead play around with it. I think it's impossible to mess this up!
